Sustainability: Preserving Belize

From the preservation of an intact 12,000 acre nature reserve to the implementation of daily practices that reduce the Lodge’s carbon footprint, Copal Tree Lodge is committed to conservation and local economic development.

  • The majority of the food served in the restaurant is organically produced on their farm.
  • They use sustainable, line-caught fish and seasonal seafood purchased directly from local day boat fishermen.
  • They are helping to save Belize’s indigenous cuisine and the heirloom crops that define it by growing native crops on our 3,000-acre organic farm.
  • They are building a global marketplace for Belizean made products through the chocolate, coffee and rum productions right at Copal Tree Lodge.
  • They make furniture and building materials on site from their own wild fall or sustainably harvested wood.

Food & Drink

Copal Tree Lodge is dedicated to developing lasting economic stability in Southern Belize through agriculture. The majority of food served at the lodge is grown on-site. Sugar cane, cacao, and coffee are grown organically by local people who are paid fair wages and treated with integrity and respect. At the Garden Table Restaurant, the chef makes wonderful use of the ingredients grown by the farm team and sourced locally from nearby farmers.

Using that same commitment to the local ecosystem, Copalli Rum is created in a zero-impact facility using a non-hybridized sugarcane varietal native to the area. The farm-to-flask initiative supports sustainable agriculture causes in Southern Belize by producing and selling premium organic spirits. Located in the heart of the main lodge, the Copal Tree Rum Bar is the place to relax and enjoy this homemade rum.
